Mixed Balsam Pear with Litchi

将苦瓜1根剖开去瓤,洗净切成薄片,加精盐腌渍10分钟,洗净,入沸水锅稍烫捞出,除去部分苦味,加 味精 麻油 ,与20枚去壳、核的荔枝肉拌和即成。这只菜苦瓜碧绿,荔枝玉白,脆嫩爽口,为夏令的时令 佳肴

Clean one balsam pear, de-seed and cut into thin slices, then pickle in salt for 10 minutes. Put the balsam pear slices in boiling water to remove its bitter taste. Add the salt, monosodium glutamate, sesame oil as well as 20 litchi nuts without shells and pits, stir well.

The dish features green balsam pear slices and white litchis, most suitable for summer.
