Eating litchi can cause excessive internal heat. If mixed with balsam pear , the delicious cold dish can help in both relieving heat and removing heat.

Mixed Balsam Pear with Litchi

Clean one balsam pear, de-seed and cut into thin slices, then pickle in salt for 10 minutes. Put the balsam pear slices in boiling water to remove its bitter taste. Add the salt , monosodium glutamate , sesame oil as well as 20 litchi nuts without shells and pits, stir well.

The dish features green balsam pear slices and white litchis, most suitable for summer.
